The 2020 Chablis Les Clos Grand Cru has a feisty bouquet with fennel-tinged citrus fruit and an underlying mineralité that comes through with aeration. It feels backward compared to its peers. The palate is peppery on the entry, with a gentle grip and a keen line of acidity. Linear towards the finish, this feels like a Les Clos that intends to bide its time, and that's not a bad thing. It's one to watch. Tasted blind at the annual Burgfest tasting.

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
